The history of pesto is a fascinating journey through the centuries. Its origins, in fact, are much older than one might imagine. Already in ancient Rome, "moretum" was prepared, a mixture of aromatic herbs, garlic, oil and cheese, described by Virgil. In the Middle Ages, then, we find "agliata", a mixture of garlic and walnuts, another ancestor of pesto. The current recipe has been consolidated since the mid-19th century, thanks to the passion and dedication of artisans who have been able to pass on the tradition to the present day.
