Description

Cacioricotta Mista is a traditional cheese from Puglia, made with a mixture of cow, goat and sheep milk. This cheese combines elements of both ricotta and aged cheese, thanks to a process of coagulating the milk with rennet and heat. After coagulation, the curd is drained, salted and pressed into molds.

Cacioricotta Mista can be enjoyed fresh, typically within a few days of production, when it offers a soft texture and delicate flavor. Alternatively, it can be aged for several months, developing a firmer texture and a robust, complex flavor.

This cheese is extremely versatile in the kitchen. It can be grated on pasta, enriching the dish with its milky, acidic and slightly salty notes, or used in salads to add a touch of strong flavor.
