Here, the cheesemaking tradition has been handed down for generations, preserved in ancient natural caves called "crotti". Our ancestors discovered that the fresh and constant air that came out of these cavities was ideal for preserving food, and so the crotti were transformed into natural cellars where cheeses mature slowly, acquiring unique aromas and flavors.

Gildo, heir to this ancient art, is passionately dedicated to the production of traditional Valsassina cheeses, buffalo and goat milk cheeses, using only 100% goat milk. His cellar, dating back to 1850, is one of the most prestigious in the valley, a place where tradition blends with innovation to create raw milk cheeses that capture the essence of this territory.
